Lazy summer days make perfect opportunities to partake of your favorite edibles. Of course, we want to enjoy our cannabis treats without ruining the beach bodies we’ve worked so hard to get. Try these recipes for guilt-free cannabis goodies this summer.

Gluten-Free Goji Berry and Cannabis Oatmeal Cookies


These protein and antioxidant-loaded cannabis cookies will be a crowd-pleaser at your backyard party this season.

Ingredients:

  • 3.5 grams (1/4 ounce) cleaned, decarboxylated cannabis flowers
  • 2 cups regular or quick oats
  • 1/2 cup oats, ground into flour
  • 4 whites from organic, free-range eggs
  • 1/2 cup coconut oil or butter, softened
  • 1 cup stevia powder or preferred natural sweetener
  • 2 teaspoons natural vanilla extract
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • Ground cinnamon to taste
  • 1/4 cup goji berries (Substitute cranberries or raisins, if needed.)

Directions:


Before you cook with it, cannabis has to go through a chemical process called decarboxylation. Cannabis flowers will not produce the desired effects without being prepared in this way. It’s easy to decarboxylate cannabis in a conventional oven.

Procedure to decarboxylate cannabis:

  1. Set the oven to 275 degrees F.
  2. Separate the cannabis flowers into smaller chunks, and place them on a baking tray. Use baking paper, if desired.
  3. Cook the herbs until they seem dry and take on a slightly tan color. About 45 minutes.
  4. Allow cannabis flowers to cool for at least fifteen minutes before using them for edibles.

Procedure for cookies:

  1. Preheat oven to 350 F.
  2. Using a coffee grinder, grind the prepared cannabis into a coarse flour.  Wait a few moments before you open the lid to allow the crystals to settle back into the cannabis.  You should end up with around 1/2 cup of ground cannabis flour. Cut the amount of cannabis in half if you would like a milder effect.
  3. Beat the eggs, and mix them with the coconut oil, vanilla extract, stevia powder and salt. Add cinnamon to taste.
  4. In a separate bowl, combine oat flour, baking powder, baking soda, baking powder and cannabis. Mix thoroughly.
  5. Slowly add the dry ingredients to the egg and oil mixture. Add oatmeal and goji berries.
  6. Drop by rounded teaspoonfuls on ungreased cookies sheets, and bake for 25 minutes.


Makes 2 dozen cookies.

Vegan Cannabis Brownies


Edibles have come a long way since Alice B.Toklas included her famous recipe for cannabis brownies in her cookbook in 1954. This updated cannabis brownie recipe would make even Alice proud.

Ingredients:

  • 3.5 grams (about 1/8 ounce) cleaned, decarboxylated cannabis flowers
  • 1 cup coconut oil
  • 1 cup stevia powder or preferred natural sweetener
  • 3/4 cup gluten-free flour
  • 1/4 cup unsweetened cocoa powder
  • 2 teaspoons natural vanilla extract
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon of each ground cinnamon and ground ginger
  • 1/2 cup crushed almonds (optional)

Directions:

  1. Preheat oven to 300 F. Grind the decarboxylated cannabis flowers.  Place the powder in a small bowl.
  2. Mix coconut oil, stevia powder and vanilla extract in a glass or stainless steel bowl. Add salt.
  3. In a separate bowl, combine the flour, cocoa powder, cannabis powder, baking soda and baking powder. Add cinnamon and ginger to taste. Mix thoroughly.
  4. Slowly add the dry ingredients to the coconut oil mixture until well blended.
  5. Pour the batter into a prepared glass baking dish, and bake for 30 minutes.


Makes 24 brownies.

Blueberry Watermelon Anti-Oxidant Cannabis Cocktail


A day by the pool just isn’t the same without a refreshing cocktail in hand.  We’ve combined the classic summer flavor of watermelon with the antioxidant power of blueberries for a delicious, cannabis-infused summer cocktail.

Ingredients:

  • Cannabis oil or alcohol infusion
  • 1/4 cup seedless watermelon, cubed
  • 1/4 cup fresh or frozen blueberries
  • Juice of 1 lemon
  • Organic honey (to taste)
  • 1 cup mineral water
  • Ice cubes
  • 2 ounces of vodka (optional)
  • Sprig of mint (optional)

Directions:

  1. Place mineral water, lemon juice and vodka in a blender.  Add watermelon, blueberries and honey plus a few drops of cannabis oil or tincture depending on the desired strength. Blend.
  2. Add ice cubes and pulse the mixture until blended.
  3. Serve in a large martini glass with a sprig of mint.


Makes 2 cocktails.
